RECIPE – Peanut Butter Pumpkin Spice & Oat Bites

I came up with this last night while trying to think of ways to integrate whole grains with my protein and pumpkin.   Very easy to make, freeze and pop a couple in the lunch bag.

Peanut Butter Pumpkin Spice & Oat Breakfast Bites

1 cup organic crunchy peanut butter

1 cup organic pumpkin puree

2 tbsp cinnamon

1/2 tsp nutmeg

1/8 tsp allspice

1/8 tsp cloves

¼ tsp sea salt

1 tbsp maca powder

2 cups organic steel cut oats

 

Can Add:

Cranberries

Chocolate chips

Nuts

Protein powder

No-Bake

Gluten free

Organic

In a large bowl, stir together the peanut butter, pumpkin puree and spices.  Add any additional fixings you desire.  Pour the steel cut oats into a small bowl or pan.  Ball the peanut butter and pumpkin spiced mixture and roll it into the
steel cut oats.  Place in container and refrigerate or freeze until eaten.
